I had some doubts about Irish potato porridge the first time my friends Asikey and Dauki told me about the food. The only way I prepared my Irish potato then was making potato chips. Dauki promised to prepare it for me with the conviction that I would love it and boy I did! I became hooked! Irish potato porridge has become one of my favourite dishes and people you are about to find out why.
Ingredients.
Irish potatoes
Fresh tomatoes
Fresh pepper
Vegetable or palm oil
Onions
Garlic
Ginger
Carrots
Green beans
Crayfish
Smoked fish
Seasoning- to taste
Salt- to taste
Water.
Preparation.
-Peel the Irish potatoes, cut into smaller quantities and wash.
-Wash and dice the carrots and green beans.
-Blend or cut the tomatoes, pepper, garlic, ginger and onions.
-Put a clean pot on fire and add vegetable or palm oil.
-Pour the blended or cut tomatoes, pepper, garlic, ginger and onions and leave for 25-30 minutes.
-When it is done, add the smoked fish, crayfish, seasoning and salt to taste.
-Then add enough water to the pot and leave to boil.
-Pour the already washed Irish potatoes into the pot and stir very well, check for salt.
-Allow to boil till the potatoes is properly done and soft.
-When it is done, add the already diced carrots and green beans and stir properly.
-And your Irish potatoes porridge is ready!

Fried Rice
Hey people! How time flies...last week saturday was my birthday and since i had made no special plans, I decided to cook something for me and my bestie. Here's the recipe...hope you enjoy it as much as we did.
Ingredients
Rice
Green pepper
Meat/fish
Fresh pepper
Vegetable oil
Ginger and garlic
Eggs
Curry and thyme
Crayfish
Seasoning-to taste
Carrots
Salt to taste
Green beans
Water
Green peas
Onions
Preparation:
-Parboil the rice for 10-15 minutes and drain the water.
-Boil the meat/fish with onions, garlic, pepper, seasoning cubes and salt.
-Put a pot on fire and pour some vegetable oil.
-Fry the fish/meat until brown in colour.
-After frying, remove the meat/fish and pour the stock into the pot.
-Add the onions, pepper, ginger, garlic, thyme, curry, crayfish, seasoning, salt and allow to simmer for 10 minutes or more.
-Then pour the already parboiled rice into the pot and stir properly.
-Check for salt.
-Wash the eggs and put into the pot of rice to boil.
-Allow to cook until the rice is done, then take out the eggs and peel.
-Put a frying pan/pot on fire.
-Add a little quantity of vegetable oil.
-Add a small amount of salt.
-Pour the diced onions, carrots, green beans/peas/pepper and stir fry for 3-5 minutes.
-Pour into the already cooked rice and stir well till properly mixed.
-Serve as desired!
